Breakfast for Karen & I: mm GOOD! Simple! Great For You!
I shredded 1/2 head of cauliflower, slices some mushrooms, onions and 3 colors of peppers, and added sliced apples.
I then stir fried all in canola oil. I prefer Olive oil but as I have recently learned that canola is “just as good for you as olive oil, yet much cheaper, I am experimenting with it. —- My findings, regarding same, later.
Spices used are simply curry powder on cauliflower, with salt and freshly ground pepper on it and salt and pepper on the the other ingredients.
I like to stir fry cauliflower separately so that it gets a bit “fried” rather than just “steamed” effect, as do the same for the mushrooms (mmm) and onions with peppers. The apple slices are tossed in last, just before I turn off the stove and serve so they do not get totally mushy.
Karen & I ate all of it. She added slices of her homemade BEER BREAD as toast today.
Sometimes I would add an egg, usually fried but whatever you like is fine with toast.
Complete meal-Low Cost-HEALTHY-covering the spectrum for “food groups”.
It is a feel good, taste good, good for you dining experience! Wish you all could SMELL the Aromas!
